Ingredients for 4 servings:

  • 4 veal escalopes, very thin
  • 4 slices of Parma ham
  • n. B. Sage leaves, fresh
  • 1 tbsp butter
  • salt and pepper
  • ¼ liter broth
  • 1 tbsp butter for butter flakes

Instructions

Saltimbocca, a typical dish of Italian country cuisine, literally means ‘jump into the mouth’

Preheat the oven to 50°C. Wash the veal escalopes, pat dry, flatten, and halve them. Halve the Parma ham and top the escalopes with it. Secure the ham and sage together with a toothpick. Sear the escalopes vigorously, sage-and-ham-side down, for 3 minutes. Season everything with salt and pepper, turn, and sear for another 2 minutes, then keep warm. Deglaze the pan with the stock and stir in the butter with a whisk. Pour the sauce over the escalopes and serve immediately.
