Salty chocolate stars

Ingredients for 1 servings:

  • 200 g spelt flour type 630
  • 60 g cocoa powder
  • 40 g potato flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 150 g butter, soft
  • 50 g sour cream
  • 200 g raw cane sugar
  • 1 egg(s)
  • 1 tsp vanilla extract
  • 1 cup of chocolate icing
  • Salt, coarse

Instructions

Working time approx. 45 minutes; Rest time approx. 2 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 57 minutes

Mix the flour with the cocoa powder, potato flour, baking powder, and salt. Beat the butter with the sour cream, sugar, and egg until fluffy. Add the flour mixture and the vanilla extract and make a soft, slightly sticky dough. Wrap the dough in plastic wrap and chill for at least two hours. Roll out the dough in small portions between two layers of plastic wrap. Return the leftover dough to the refrigerator at regular intervals, as it softens very quickly. Cut out stars and place them on a baking tray lined with foil or paper (three trays are needed). Bake in a preheated oven at 190°C (top/bottom heat) for about 9-10 minutes. Be sure to let them cool completely on the baking tray, as the cookies will be very soft after baking. Once they have cooled, place a dollop of chocolate icing on each star and sprinkle with coarse salt.
