Ingredients for 1 servings:

  • 6 egg whites
  • ¼ cup(s) sugar, very fine, (caster)
  • 1 tsp vinegar (malt vinegar)
  • 2 tsp cornstarch
  • 1 tbsp water, hot
  • 1 vanilla pod(s), pulp

Preheat the oven to 100°C fan/convection oven. First, beat the egg whites, then gradually add the sugar and then the rest of the ingredients. It can take a good 15-20 minutes until the mixture is nice and creamy. You’ll know when to stop when the mixture forms a peak with the mixer and it “stands still.” Now pour the mixture onto a baking sheet lined with baking paper and form a nice, round pile. IMPORTANT: Do not spread the mixture! Simply shape it into a round shape. Now bake the whole thing for about 75 minutes at 100°C fan/convection oven and then let it cool completely. Now your imagination is the limit! Decorate it with whatever you like best, e.g., whipped cream with fruit, chocolate, syrup, cookie crumbs, Smarties, and much more.
