Ingredients for 4 servings:
- 1 kg roast beef
- 50 g celery
- 50 g carrot(s)
- 50 g onion(s)
- 50 g leek
- 2 gingerbread (sauce gingerbread)
- 1 liter meat broth
- 3 bay leaves
- 5 juniper berries
- 125 ml vinegar
- 3 tbsp sugar
- 1 shot of red wine
Instructions
Working time approx. 45 minutes; Rest period approx. 2 days; Total time approx. 2 days 45 minutes
Cook the marinade ingredients, let them cool, and pour them over the meat. Marinate for at least 2-3 days. Thoroughly dry the meat and sear it on all sides in very hot fat. Add the vegetables and let everything brown well. Then pour in the marinade and reduce it 2-3 times. To thicken the sauce, add a gravy cake soaked in red wine and simmer covered in a preheated oven for 1.5 hours. To round off the sauce, you can season the pureed sauce with sour cream. The best side dishes are dumplings (made with boiled potatoes only) and red cabbage.
