Sauerkraut soup with apple

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 cloves garlic
  • 1 apple
  • 1 m.-sized potato(s)
  • some olive oil for frying
  • 500 g sauerkraut
  • 1 tsp caraway seeds
  • e.g. salt and pepper
  • 1 tsp mustard
  • 1 tbsp tomato paste
  • 500 ml broth
  • 1 tsp honey
  • n. B. Sour cream, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 28 minutes; Total time approx. 43 minutes

First, peel the onion, garlic, apple, and potato and cut them into small cubes. Sauté them in hot olive oil for about 3 minutes. Now add the sauerkraut, spices, mustard, tomato paste, and broth. Simmer everything at low heat for about 20-25 minutes. Season with honey and puree. Optionally, serve with sour cream. Tip: The soup is very creamy in this version.
