Sauerkraut sweet – sour

Ingredients for 4 servings:

  • 1 small onion(s), finely diced
  • 1 tbsp oil
  • 1 large can of sauerkraut
  • 1 large apple
  • 1 tbsp mustard, medium hot
  • 1 tsp clove(s), ground
  • 3 juniper berries
  • 1 bay leaf
  • 6 tbsp honey
  • Vinegar, as needed

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the diced onion in a little oil until translucent, add the sauerkraut, peel, core, and finely chop the apple, and add it to the pan. Add the mustard, cloves, juniper berries, bay leaf, and honey. Stir everything well and, if desired, add a little more vinegar to prevent it from burning. Let it simmer for about 45 minutes. Using a pressure cooker (steamer), the whole process goes a bit faster; cook for about 10 minutes on the second ring. It tastes even better if you let it stand overnight and then reheat it. Delicious with potato dumplings, bratwurst, blood sausage, and liverwurst.
