Sauerkraut – Tatar

Ingredients for 4 servings:

  • 400 g sauerkraut, mild
  • 1 m.-sized carrot(s)
  • 1 small zucchini
  • 3 sprigs of parsley
  • 2 shallots
  • 200 g quark, low-fat
  • some lemon(s), grated peel
  • salt and pepper
  • Yeast (yeast wort)
  • Sunflower seeds
  • Raisins

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Drain the sauerkraut well and chop very finely. Wash, peel, and finely grate the carrots and zucchini. Peel and dice the shallots and chop the parsley. Mix everything with the sauerkraut. Stir the quark with the grated lemon zest, salt, pepper, and yeast seasoning, if desired, until smooth. Stir into the sauerkraut and chill the mixture. To serve, scoop out 2 tablespoons of dumplings and serve as an appetizer or as a cold side dish at a buffet with bread or toast. If desired, the tartare can be refined with sunflower seeds and raisins.
