Sausage salad à la Alsace – Alsatian sausage salad

Ingredients for 4 servings:

  • 500 g Lyoner
  • 300 g Emmental cheese
  • 1 large onion(s)
  • 4 small gherkins
  • 8 tbsp walnut oil
  • 6 tbsp raspberry vinegar
  • 1 dashes lemon juice
  • 1 pinch(s) of salt and pepper
  • 1 pinch(s) of sugar
  • 1 tsp Dijon mustard, if needed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 32 minutes

Cut the Lyoner and Emmental cheeses into thin, equal strips. Peel the onion, slice into thin half rings, and boil briefly (max. 2 minutes) in water. Dice the gherkins. Place everything in a bowl. For the dressing, combine the walnut oil, raspberry vinegar, lemon juice, salt, pepper, and sugar, adding 1 teaspoon of Dijon mustard if desired. Combine the ingredients and the dressing. Let stand for about 2 hours before serving. Serve with Brägele (fried potatoes) and Bibeles cheese (quark with chives, salt, and pepper).
