Sausage tortellini

Ingredients for 2 servings:

  • 250g tortellini
  • 150 g sausage
  • 1 bell pepper(s), yellow
  • 10 g pine nuts
  • 50 g cherry tomatoes
  • 1.6 liters of vegetable broth
  • 1 bunch of basil
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the tortellini in 1.5 liters of vegetable stock until al dente. Meanwhile, cut the sausage into large pieces and sauté in a pan without any additional fat. Clean and dice the bell peppers, and add them to the sausage along with the pine nuts. Halve the cherry tomatoes and sauté them in the same pan. Deglaze with the remaining vegetable stock. Drain the cooked pasta in a colander, then add it directly to the sauce and stir. Season with salt and pepper. Serve hot in a large bowl.
