Ingredients for 4 servings:

  • 250 g salsiccia (Italian sausage with fennel)
  • 1 tbsp olive oil
  • 4 sage leaves
  • 1 tsp tomato paste
  • 8 cherry tomatoes or cocktail tomatoes
  • 2 tbsp parsley, flat, chopped
  • Pepper, from the mill
  • 200 g pasta, dried

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the pasta al dente in boiling salted water. In the meantime, press the sausage meat out of the casing, shape it into small balls, and fry it in olive oil until crispy. Add the sage leaves and fry briefly. Stir in the tomato paste and a little of the pasta cooking water. Add the cherry tomatoes to the pan just before the end. Drain the cooked pasta and mix it with the other ingredients in the pan. Serve sprinkled with chopped parsley and freshly ground pepper. You can serve it with freshly grated Parmesan cheese. As a pasta course in a multi-course meal, this recipe is enough for 4 people. Otherwise, it will satisfy 2 people. With 4 servings, one serving has 377 kcal.
