Ingredients for 12 servings:
- 1 loaf(s) (farmer’s bread), round, approx. 25 cm diameter
- 500 g quark
- 200 g double cream cheese
- Salt
- 1 onion(s)
- garlic powder
- Cayenne pepper
- 100 g butter
- 2 tsp peppercorns, green
- 1 tsp mustard, hot
- 1 tbsp brandy
- 375 g ham (salmon ham)
- 2 slices of pumpernickel
- 1 onion(s), red
- 1 jar of pickled gherkins (pepper gherkins)
- 2 bunch radishes
- 1 bunch of parsley
- 1 bunch of chives
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Cut a top off the bread and use it for another purpose. Cut the bread in half horizontally. Cut half-moons out of the pumpernickel. Mix the quark with the cream cheese and season generously with salt, finely chopped onion, garlic powder, and cayenne pepper. Mash the butter, peppercorns, mustard, brandy, and a pinch of salt with a fork. Spread the bottom slice of bread with butter and top with ham slices. Place the second slice of bread on top and spread the cheese cream all around and on top. Divide the surface into 12 pieces. Garnish with ham rolls, onion slices, cucumber, and pumpernickel half-moons. Sprinkle with chives, radishes, and parsley.
