Ingredients for 12 servings:

  • 120 g vegetables, e.g. carrots, zucchini, peppers, corn
  • 1 tbsp herbs, fresh or frozen
  • 100 g ham, cooked and salami or roast leftovers
  • 200 g flour
  • 1 packet of baking powder
  • 50 g oat flakes
  • 1 tbsp onion(s) (fried onions)
  • 1 egg(s)
  • 50 ml oil
  • 250 ml buttermilk
  • 150 g cheese, freshly grated Emmental for the dough
  • 50 g cheese, fresh Emmental for sprinkling
  • ½ tsp spice(s) to taste

Working time approx. 30 minutes; Total time approx. 30 minutes

can be made as everyone likes, including vegetarian and with any vegetables

Wash, trim, and finely chop the vegetables and herbs. Finely chop the sausage. Combine the remaining ingredients in the batter and mix well. Then add the vegetables, herbs, and sausage, mix well again, and pour into the greased muffin tins (I always add the paper baking cups right away, so they always pop out perfectly). Sprinkle with cheese and bake at 160°C for about 20-25 minutes until golden brown. Let the muffins cool for another 5-10 minutes after baking, then enjoy while still warm. They’re also delicious cold!
