Ingredients for 1 servings:

  • 2 small sweet potatoes
  • 4 m.-sized carrot(s)
  • 5 eggs, size M
  • 1 m.-sized onion(s)
  • 100 g cream cheese, grainy
  • 250 g spelt flour
  • 1 handful of nuts
  • 1 tbsp baking powder
  • chili powder
  • 1 pinch of nutmeg
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

First, preheat the oven to 180°C (top/bottom heat). Peel and grate the sweet potatoes and carrots. Peel and dice the onion. Combine the eggs and cream cheese in a bowl, then add the flour and baking powder. Add the vegetables and spices. Mix everything well and fill 12 muffin tins. Garnish the muffins with the nuts and bake for 30-40 minutes (test the wood). Tips: You can also be creative with this recipe. For example, you could roast the onions. Parmesan cheese also works well in the batter. Bacon gives the muffins a completely different flavor. You can also add herbs.
