Savory waffles with wild garlic sour cream

Ingredients for 2 servings:

  • 250 g potatoes
  • 250 g bunched carrots
  • 2 m.-sized onion(s)
  • 2 m.-sized eggs
  • 100 g wheat flour type 1050
  • 200 g cheese, mild-spicy, finely grated
  • salt and pepper
  • Paprika powder
  • chili powder
  • Thyme
  • 100 g yogurt, 10% fat
  • 100 g sour cream
  • 10 leaves of wild garlic, finely chopped
  • Salt
  • 10 cocktail tomatoes

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Peel and grate the carrots, potatoes, and onions, or chop them very finely in a food processor. Stir in the cheese, flour, eggs, and seasonings. Preheat a Belgian waffle iron and bake the waffles in batches for about 10-12 minutes. For the dip, mix together the yogurt, sour cream, wild garlic, and salt. Serve the waffles on plates with the sour cream and sprinkle with the tomatoes.
