Ingredients for 4 servings:
- 8 scallop(s), 8 – 12
- 400 g spinach with Gorgonzola, frozen
- 8 dates wrapped in bacon, from the refrigerated section, 8 – 12
- 1 tbsp olive oil
- 6 walnut halves
- salt and pepper
- nutmeg
- Paprika powder
- toothpick
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Prepare the spinach according to the package instructions. Stir in a little nutmeg. Roughly crumble the walnuts and lightly toast them in a dry pan. Set aside. Wash the mussels and pat dry, season with paprika and pepper, and fry with the dates in oil for 4-5 minutes. Turn once or twice and season lightly with salt. Using a toothpick, place a date on each mussel. Arrange 2-3 skewers per person on the spinach and garnish with the walnuts.
