- 1 Shallot
- 300 g Waxy potatoes
- 150 g Salmon fillet
- 0,5 bunch Fresh dill
- 1 tsp Butter
- 0,5 liter Vegetable broth
- 100 ml Cream
- 1 Lime
- Salt and pepper
- Peel the shallot and cut into cubes. Peel the potatoes and cut into small pieces. Cut the skin off the salmon fillet and cut the salmon fillet first into slices and then into small cubes. Remove the stalks from the dill, cut into small pieces and set aside. Halve the lime and rub the peel off.
- Heat the butter in a saucepan and sauté the shallots in it. Add the potatoes, stock, cream and pieces of dill stalks. Let everything simmer for about 20 minutes. Then add the salmon cubes and let stand for 1 minute (do not boil anymore).
- Season the soup with salt, pepper and lime juice. Chop the dill tips and serve sprinkled with the lime zest on the soup.
