Schnitzel – baked with onions, Maultaschen, egg and cheese
First, pound the schnitzels until thin, then whisk the eggs in a deep plate with salt, pepper, and paprika. Then coat the schnitzels in flour, then dip them in the eggs, and then coat them in breadcrumbs. Heat a pan and fry the schnitzels in oil. When they’re done, place them in a shallow baking dish or bowl (it must be oven-safe). Peel the onions, remove the stalks, and cut them into half rings. Fry them in a pan, adding a little stock every now and then to create melted onions. When they’re done, remove them from the pan and set them aside. Cut the Maultaschen into thin strips and set these aside. Fry the eggs into fried eggs. Preheat the oven to 180°C. Take the baking dish with the schnitzels and place the onions on top, then the Maultaschen on top of the onions, and then the fried egg on top of the Maultaschen. Finally, sprinkle the whole thing with grated cheese (amount to taste, but make sure it’s completely covered) and bake it in the oven until the cheese is golden brown. Serve with fries or simply a slice of bread.
