Ingredients for 2 servings:
- 2 schnitzels, of your choice (veal, pork or poultry schnitzel)
- e.g. breadcrumbs
- n. B. Flour
- some pepper
- some salt
- 1 egg(s)
- 1 packet of hollandaise sauce
- n. B. Sambal Oelek
- 1 kg clarified butter
- 500 g French fries, of your choice
- tbsp, sautéed lettuce, for garnishing

Put the flour and breadcrumbs in separate bowls or deep plates. Whisk the egg in another bowl and season with salt and pepper. Now cover the schnitzels (it’s best to have the butcher cut them for you) with cling film and flatten them (approx. 6 mm thick). First coat the schnitzels in the flour, then dip them completely in the egg mixture, then coat them in the breadcrumbs. Heat a little clarified butter and fry the schnitzels on both sides until golden brown. Heat more clarified butter and fry the fries in it until golden brown. Mix the hollandaise sauce with one or two tablespoons of sambal oelek. Then briefly heat the mixture of hollandaise sauce and sambal oelek in a saucepan (do not boil!) until the sauce thins. The sauce is then ready to serve. Serve everything together and garnish with salad; after all, eating is a feast for the eyes. Tip: If you don’t want too much fat, you can also bake the fries and schnitzel in the oven. Brush the schnitzel with a small amount of fat.
