Schorschi's bacon dumplings

Ingredients for 4 servings:

  • 80 g bacon, cut into fine cubes
  • ½ onion(s), finely diced
  • 150 g white bread, sliceable
  • 1 tbsp butter
  • 2 tbsp flour
  • 100 ml milk or water
  • 2 eggs
  • 1 tbsp parsley or chives, finely chopped
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Original recipe from South Tyrol

Cut the white bread into small cubes. Sauté the diced onion in the butter, pour it over the bread, and mix everything together. Stir in the flour and bacon. Stir in the eggs, milk, parsley, and salt and mix everything well. Let the mixture rest for about 15 minutes. Then form 8 dumplings and simmer in salted water, partially covered, for about 15 minutes. Serve as a side dish with roasts or game, or as a standalone meal with leaf salad.
