Schupfnudeln with apple, savoy cabbage and pumpkin vegetables

Ingredients for 4 servings:

  • 1 serving of Schupfnudeln (according to the recipe by mickyjenny)
  • 1 onion(s), diced
  • 500 g pumpkin flesh (Hokkaido), diced
  • 5 leaves of savoy cabbage, cut into strips
  • 3 small apples, diced
  • 1 dashes lemon juice
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 13 minutes; Total time approx. 23 minutes

Sauté the onion in a pan with a little oil, add the pumpkin, and simmer for about 10 minutes over low heat. It should still be firm to the bite. Then add the savoy cabbage strips and apple pieces and sauté briefly. Season with lemon juice, salt, and pepper, and stir into the potato dumplings.
