Schupfnudeln with tomatoes and pine nuts

Ingredients for 2 servings:

  • 250 g potato noodles
  • 200 g cocktail tomatoes
  • 2 tbsp pine nuts
  • 2 tbsp olive oil
  • ½ tsp basil, dried
  • ½ tsp coriander, dried
  • ½ tsp parsley, dried
  • some salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

vegetarian

Heat the oil in a pan. Cook the Schnupfedeln according to the instructions. Wash and halve the cherry tomatoes, and fry them in the same oil. Add the pine nuts and fry them. Add the dried herbs and season with salt and pepper. Serve.
