Scrambled eggs with salmon

Ingredients for 1 servings:

  • 3 eggs
  • 50 g salmon
  • 30 g spring onions
  • 50 g cherry tomatoes
  • 1 tbsp sunflower seeds
  • 1 tsp coconut oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Crack the eggs into a bowl and whisk. Cut the salmon into chunks, chop the cherry tomatoes, and slice the spring onions into rings. Add all the chopped ingredients to the bowl with the eggs. Finally, add the sunflower seeds and mix. Melt the coconut oil in a small, nonstick pan and stir in the egg mixture until the egg is set. This takes about five minutes.
