Scrambled eggs with steamed peppers

Ingredients for 2 servings:

  • 2 kg bell pepper(s), green
  • 6 eggs
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Wash and dry the peppers, halve them, and remove the seeds and membranes. Cut the pepper halves into strips. Add a little water to a pot, bring to a boil, add the pepper strips, and sauté over medium heat, stirring regularly. Meanwhile, beat the eggs with salt and pepper. When the peppers begin to soften, stir in the egg mixture. Once the mixture has set, like scrambled eggs, season again with salt and pepper. Serve with baguette or country bread. The sautéed peppers also make a great vegetable side dish.
