Ingredients for 4 servings:
- 5 eggs
- 4 tbsp flour
- 1 shot of mineral water
- 2 dashes Worcestershire sauce
- 1 dashes Tabasco
- 1 dashes Maggi
- salt and pepper
- 1 pinch(s) of sugar
- vegetable oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with asparagus or cauliflower
Beat the eggs until frothy. Add salt, pepper, and sugar and continue stirring. Then stir in the remaining ingredients, then add the flour a spoonful at a time and mix well. Let it sit for at least 15 minutes (whisk occasionally). Heat the oil in a pan and fry in batches, like pancakes, until the edges are lightly browned and the batter is set on top. Turn over. Then scrape the “pancakes” in the pan (it’s best to scrape them with two spatulas). It’s best to whisk the batter again in between. Repeat this process several times (until all the batter is used up, of course). Kratzete go well with anything served with hollandaise sauce. The recipe comes from my mother-in-law and my husband.
