Seafood Risotto

Ingredients for 2 servings:

  • 1 pack of mixed seafood (fresh or frozen), approx. 500 g
  • 1 cup rice (risotto rice)
  • 2 cups water
  • 1 tbsp olive oil
  • 1 pinch of salt
  • 2 cloves garlic, to taste
  • 2 tbsp tomato paste
  • 1 cube of soup
  • 1 small onion(s)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

WW suitable

Finely chop the onion and fry briefly in olive oil. Add the risotto rice and seafood and sauté slightly. Then add water, season with salt, add the crushed garlic, add the tomato paste, and crumble in the stock cube. Simmer gently for about 20 to 30 minutes, until the rice is tender.
