Seafood Satay (Arno Funke)
The perfect seafood satay (arno funke) recipe with a picture and simple step-by-step instructions.
Shrimp skewers
- 8 piece King prawns
- 4 piece Lemongrass
- 1 tbsp Chili Sauce (Sambal Oelek)
- 1 piece Lime
- 3 tbsp Soy sauce
- 2 tbsp Fish sauce
- 2 tsp Palm sugar
- 10 g Ginger
- 1 piece Clove of garlic
Green mango salad
- 2 piece Mango green
- 3 tbsp Palm sugar
- 3 tbsp Fish sauce
- 1 piece Spring onion
- 1 piece Chilli pepper
- 1 tbsp Sesame oil
- 1 tbsp Coriander
Shrimp skewers
- For the prawn skewers, peel the ginger and the clove of garlic and chop or press through very finely. Mix together all the ingredients for the marinade.
- Put the prawns in the marinade and marinate for about 1 hour, then skewer on lemongrass. Cook in the pan over medium heat. (approx. 5 minutes).
Mango salad
- For the mango salad, peel the mangoes and cut into strips.
- Make a marinade from palm sugar, fish sauce, spring onions, chilli and sesame oil and add to the mango with coriander and stir well.
- Arrange the mango salad on plates and drape the skewers on top.
