  • 40 g butter
  • ¼ liter of boiling water
  • Parsley
  • Salt

Upper Austrian recipe

This is my family’s traditional semolina dumpling recipe, without eggs or breadcrumbs. Simple and delicious. Mix the semolina, salt, and finely chopped parsley, add the melted butter, and stir. Pour boiling water over it and stir until smooth. If the dough seems too stiff, add a little more water. Form the dumplings, but be careful: they must be very fluffy before adding them to the boiling, salted water, or they will become hard. Cook for 20 minutes. Ideal as a side dish to roast meat or smoked pork. Also suitable as a soup garnish.
