Semolina soufflé with marzipan

Ingredients for 6 servings:

  • 600 ml milk
  • 200 g marzipan paste
  • 1 tbsp sugar
  • 100 g semolina
  • 1 cup whipped cream
  • 1 vanilla pod(s) (optional)

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Lübeck Temptation

Gently heat the milk with the vanilla pod and the scraped seeds, then dissolve the sugar and the cut-in-pieces of marzipan. Then slowly stir in the semolina. Remove from the heat and let cool, stirring frequently to prevent a skin from forming; it also cools faster. Whip the cream until stiff and carefully fold into the cold Flammeri. Serve with red fruit compote or simply with a seasonal fruit puree.
