Sesame baked potatoes with coriander and mint quark

Ingredients for 4 servings:

  • 1.2 kg potatoes, waxy, young
  • 2 tbsp olive oil
  • 1 tsp sea salt, coarse
  • 2 tbsp sesame seeds
  • 500 g quark, 20% fat
  • 75 g sour cream
  • ½ bunch coriander leaves
  • ½ bunch mint
  • 2 spring onions
  • 2 tbsp mineral water, carbonated
  • Salt and pepper, from the mill

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Potatoes and curd cheese offer a high-quality protein combination

Wash the potatoes, halve lengthwise, and pat dry. Combine olive oil and salt in a bowl and toss the potatoes in the mixture. Spread on a baking sheet lined with baking paper and bake in a preheated oven at 180 degrees Celsius for about 30 minutes. Sprinkle with sesame seeds and continue cooking for another 15 minutes. Reduce the heat if necessary to prevent the sesame seeds from burning. Mix in the quark, sour cream, chopped herbs, and spring onions. Stir in mineral water. Season the herb quark with salt and pepper to taste. Serve with the baked sesame potatoes.
