delicious main course from Tunisia

Heat the oil in a pan and briefly fry the finely chopped garlic. Wash the bell peppers and tomatoes, cut them into pieces, and add them to the garlic. If you like it very spicy, you can also add chopped chili peppers. Mix everything well, fill with half the water, and simmer for about 10 minutes. Add the tomato paste and season with salt, pepper, and paprika. Meanwhile, peel the potatoes and cut them into pieces. Fry them in a pan with oil for about 10 minutes. Caution: Don’t let them get too soft! Add the fried potatoes to the pan and cook for about another 10 minutes. Add a little more water if necessary. The dish shouldn’t be too runny, though. Finally, crack in the eggs and let them set. Eat the dish with baguette – tear off, dip, and enjoy.
