Sheet pancakes with ham cubes

Ingredients for 6 servings:

  • 1 ½ kg potatoes
  • 2 onions
  • 4 eggs
  • 2 tbsp, heaped flour
  • 200 g ham, diced
  • 200 g crème fraîche or sour cream
  • ½ bunch parsley, chopped
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Peel and wash the potatoes. Peel the onions and finely grate both. Knead with the eggs, flour, and 3/4 of the small ham cubes, then season with salt and pepper. Spread the potato and egg mixture evenly on a well-oiled baking sheet. Bake in a preheated oven at 200°C (top/bottom heat) for about 35 minutes. Fry the remaining ham cubes without fat until crispy. Stir the sour cream or crème fraîche until smooth and spread in dollops over the cooked potato pancake. Then top with the fried ham cubes and serve garnished with the parsley.
