Ingredients for 20 servings:
- 8 egg yolks
- 30 g flour
- vanilla sugar
- 8 egg whites
- 140 g sugar
- 80 g flour
- 60 g cornstarch (cornflour)
- Flour, for dusting
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Fill with cream and dip in chocolate coating
Whisk the egg yolks with 30g of flour and vanilla sugar until smooth. Beat the egg whites with granulated sugar until stiff peaks form, fold into the yolk mixture, and stir in the flour sifted with cornstarch. Transfer the mixture to a piping bag fitted with a smooth nozzle (No. 12) and pipe the doughnuts (hemispheres approximately 5cm in diameter) onto a baking sheet lined with baking paper. Dust with flour and bake in a preheated oven at 180°C for approximately 20 minutes with the vent open. Bake the mixture thoroughly (dry) to maintain a smooth surface. This mixture is used to make Indian shells and various petits fours. The size and shape are, of course, entirely up to your creativity.
