Shirin’s Pasta Salad with Pesto

The perfect shirin’s pasta salad with pesto recipe with a picture and simple step-by-step instructions.

  • 500 g Pasta (we had Gemelli)
  • 2 Glasses (á 190g) Pesto Rosso
  • 2 Toes Garlic
  • 2 Toes Salt pepper
  • 4 tbsp Aceto Balsamico rosso (red vinegar)
  • 2 Bullets Mozzarella
  • 4 tbsp Grated Grana Padano (or Parmesan etc.)
  • 250 g Cocktail or mini date tomatoes
  • 1 bunch Basil
  • 1 medium sized Onion
  1. Boil the pasta in plenty of well-salted water. Skim off a few ladles from the pasta water and set aside. Drain the pasta and return it to the saucepan.
  2. Peel the garlic and press it through the press. Add the pesto, balsamic vinegar, salt and pepper to the pasta and mix well. At this point it should be seasoned vigorously, maybe even a little spice. Add 2-3 teaspoons of pasta water and mix well. Now let it cool down.
  3. Cut the mozzarella into smaller cubes, wash the tomatoes and cut into slices. Cut the basil into fine strips and finely dice the onion.
  4. Mix all ingredients, season again to taste and let steep for at least 1 hour or longer.
  5. I created this pasta salad for her birthday at the request of my daughter.
