Ingredients for 4 servings:

  • 2 m.-sized onion(s)
  • 4 garlic cloves
  • 1 bunch of parsley
  • 8 tbsp olive oil
  • 750 g minced lamb or beef
  • 1 ½ tsp harissa powder (Turkish grocery store)
  • 2 tsp cumin powder
  • 1 ½ tsp cinnamon powder
  • Black pepper, freshly ground

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Peel and finely chop the onions and garlic. Wash the parsley, shake dry, and finely chop the coarse stalks. Heat 2 tablespoons of olive oil in a pan and sauté the onions and garlic over low heat until translucent. Place the minced meat in a large bowl, add the parsley, harissa, spices, onions, and 2 tablespoons of oil. Mix everything well with your hands and season the meatball dough with salt and pepper. Scoop out 24 equal portions of the mixture. With wet hands, form each portion into a finger-length roll around a wooden skewer. Heat the remaining olive oil in a wide pan and fry the skewers over medium heat for 5-7 minutes on all sides until golden brown.
