Shrimp and couscous pan

Ingredients for 2 servings:

  • 300 g shrimp(s), ready to cook
  • 2 small onions
  • 3 bell peppers, red, yellow and green
  • 1 garlic clove(s)
  • 1 tsp curry powder
  • salt and pepper
  • 120 g couscous
  • 400 ml vegetable stock
  • 2 tsp lemon juice
  • 2 tsp basil, chopped

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel and dice the onions. Wash and dice the bell peppers, then mince the garlic. Heat the oil in a pan, then add the shrimp and garlic and fry until browned. Add the diced onions and bell peppers to the pan and fry. Season with curry powder, salt, and pepper. Add the couscous and sauté briefly. Then add the vegetable stock and let it simmer for about 5 minutes. Stir occasionally. Finally, add the lemon juice and basil and season with salt and pepper, if desired.
