Shrimp Hoisin with vegetables

Ingredients for 2 servings:

  • 2 heads of pak choi
  • 1 chili pepper(s), red
  • 100 g snow pea(s)
  • 1 pointed pepper, red
  • 2 spring onions
  • 400 g shrimp(s)
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tbsp soy sauce, mild
  • 1 tbsp soy sauce, dark
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp, leveled sesame oil
  • 1 liter of water
  • 100 g rice noodles
  • 1 tbsp chili oil (crispy chili oil)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cut the bok choy into thin strips, halve and thinly slice the chili pepper, and trim and halve the snow peas. Deseed and thinly slice the bell peppers and slice the spring onions into rings. Wash and dry the shrimp and fry them in a pan. After about a minute, add the ginger and garlic paste and toss the shrimp in it. Then add the soy sauce, oyster sauce, hoisin sauce, and sesame oil and mix well. Add the chopped vegetables to the pan, mix everything well, and reduce the heat. Bring one liter of water to a boil and pour it over the rice noodles in a bowl. Soak the noodles for about 2-3 minutes, then drain and add to the pan. Mix everything well and let it stand for 2 minutes. Season to taste with salt, pepper, and the chili oil.
