Shrimp skewers with dates in garlic marinade

Ingredients for 6 servings:

  • 30 large shrimp(s), frozen, peeled and deveined, or fresh
  • 500 ml olive oil
  • 5 cloves garlic
  • 1 tsp basil
  • 30 dates
  • 15 cherry tomatoes
  • 200 ml dry white wine
  • Sea salt
  • Parsley
  • tarragon
  • coriander
  • Pepper or Sambal Olek

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Starter / Tapas

Heat the olive oil for the marinade, but do not let it get too hot. Add the spices and herbs. The herbs and garlic should not brown. Halve the cherry tomatoes and alternately string one prawn, one pitted and peeled date, and one halved cherry tomato onto 25cm-long skewers. Roll the skewers in the warm marinade and let them marinate for at least two hours, or overnight if possible. Cook the skewers in a hot pan (or on the grill) for 2 minutes on each side, then baste with the marinade, deglaze with the white wine, and let rest next to the heat for 2 minutes. Serve with white bread, rice, or a bed of spinach.
