Shrimp tagliatelle with mango and Gorgonzola

Ingredients for 4 servings:

  • 400 g pasta (tagliatelle)
  • 500 g king prawns (frozen, unmarinated)
  • 300 g tomatoes (cocktail tomatoes), halved
  • ½ mango(s), peeled, cut into cubes
  • ½ bunch spring onion(s), cut into fine rings
  • 100g Gorgonzola
  • ½ cup of crème fraîche or crème legere
  • 1 tbsp oil
  • 2 tsp peppercorns, red, pickled

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the thawed shrimp with the spring onions in oil. First add the mango, then the cheese, tomatoes, and finally the crème fraîche. Simmer briefly (2-3 minutes). Season with salt and pepper. I also add whole pickled red peppercorns. In the meantime, cook the pasta. Mix everything together.
