Ingredients for 12 servings:

  • 350 g raw shrimp(s)
  • 2 m.-sized eggs
  • 1 clove(s) garlic
  • 75 g chestnuts (water chestnuts), finely chopped
  • 1 tbsp coriander greens, finely chopped
  • 2 tsp fresh ginger
  • ¼ tsp pepper
  • ¼ tsp salt
  • 6 slices of toast bread, without crust
  • 1 tbsp white sesame seeds
  • 2 liters of oil, for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Fish intermezzo with the dragon menu

Wash and peel the shrimp. Separate the two eggs. Finely chop the egg whites and shrimp with the remaining ingredients, except the bread, in a food processor until smooth. Lightly beat the egg yolk in a bowl. Brush the tops of the bread slices with the egg yolk. Spread the shrimp mixture evenly on top. Now cut the white bread slices in half diagonally twice to create small corners. Sprinkle each corner with white sesame seeds. Heat the oil moderately in a deep pan. Fry the bread slices, shrimp paste side down, in small batches for about 10-15 seconds until golden brown and crispy. Drain on kitchen paper and serve warm.
