Ingredients for 4 servings:
- 400 g flour
- 2 eggs
- 150 ml water
- ½ tsp salt
- 200 g beef
- 250 g pork
- 1 onion(s)
- 5 cloves garlic
- 3 tbsp broth or water
- 1 egg white for brushing
- salt and pepper
- sour cream or butter
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 5 minutes
Knead the flour, eggs, water, and salt into a smooth dough and roll it out on a floured surface to a thickness of about 2 mm. Cut out 5 cm diameter cookies using a glass or a cookie cutter. For the filling: Grind the meat, onions, and garlic through a grinder, mix with the broth or water until smooth, and season with salt and pepper. Place the filling in portions onto the cut-out dough pieces, brush the edges with egg white, and press together, preferably with a fork. Twist the tips of the half-moons together to form “ears” (similar to tortellini). Boil in plenty of salted water over low heat. Serve with sour cream or melted butter.
