Ingredients for 1 servings:

  • 1 kg pork (belly meat), lean
  • Bread rolls, soaked
  • 15 g salt
  • 2 onions, finely chopped
  • 2 onions, quartered
  • 1 bunch of roots
  • pepper
  • marjoram

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Boil the meat with the root vegetables, onion, and a little salt. Then remove the bones and cartilage. Mince in a grinder with the soaked bread rolls, roughly equal amounts of meat and bread rolls. Pour over a little hot stock, add the onions, and season with salt, pepper, and plenty of marjoram. Mix the mixture well and then pour into jars. Cook at 98°C for 60 to 80 minutes. If possible, you can stuff them into natural casings and then freeze them. The sausages can also be briefly cold smoked. They are eaten fried in butter with brown bread or fried potatoes and a crisp salad. The jars are also ideal for camping.
