Silesian-style potato salad

Ingredients for 10 servings:

  • 1 stalk(s) leek
  • 2 kg potato(s), waxy
  • 1 kg carrot(s)
  • 1 can of corn
  • 1 can peas
  • ½ jar Miracle Whip light
  • 1 jar gherkins
  • ½ celery root, OR:
  • 3 parsley roots
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the celery and carrots and cook with the potatoes until soft. Be careful! Pay attention to the different cooking times! Let the vegetables cool, peel the potatoes, and dice everything very finely. In the meantime, drain the corn and peas. Wash and trim the leeks, discarding the dark green ends. Cut into thin rings, then chop the rings very finely. Mix everything with about half a jar of Miracle Whip, or a little more if you like, and season to taste. Note: I always add less salt to this salad than I would to other salads, as we find it more flavorful.
