Simple apple muffins

Ingredients for 1 servings:

  • 240 g spelt flour
  • 100 g sugar
  • ½ sachet of baking powder
  • ½ tsp cinnamon powder
  • 100 ml rapeseed oil
  • 80 ml oat milk (oat drink)
  • 2 tsp lemon juice
  • 2 eggs
  • 3 apples

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel the apples and cut them into small pieces. Combine all the dry ingredients (flour, sugar, baking powder, cinnamon) in a bowl. Combine all the wet ingredients (oil, oat milk, eggs, lemon juice) in another bowl. Prepare the muffin cups. Preheat oven to 160°C (fan/convection oven). Briefly mix the dry and wet ingredients together, fold in the apples, and fill the muffin cups. Work quickly! Bake the muffins for about 25 minutes. Dust with powdered sugar, if desired.
