Simple Celery Cream Soup
The perfect simple celery cream soup recipe with a picture and simple step-by-step instructions.
Celery cream soup
- 250 g Fresh celery
- 1 Onion red
- 1 tablespoon Clarified butter
- 1 Apple boskop
- 1 Salt and pepper
- 1 liter Vegetable broth
- 2 teaspoon Gourmet fine seasoning
- 3 piece Bay leaves
- 1 packet Qimiq sauce base
Crispy bread cubes
- 4 Discs Farmers bread
- 1 tablespoon Clarified butter
- 1 tablespoon Salt
- 1 tablespoon Garlic spray
general preparations
- peel celery and cut into cubes – cut the onion into cubes – cut out the core of the apple, then cut the apple into cubes and pour orange juice over it
Preparation of celery cream soup
- Roast the onion in clarified butter – add celery cubes and roast with them – pour the vegetable stock (or water and vegetable stock powder) add bay leaves, bring everything to a boil – a little later add the apple cubes and steam everything until soft
- Take the bay leaves out of the soup and then puree the soup with the blender – stir and add the QimiQ sauce base at room temperature – then reduce to a creamy consistency – season with salt, pepper and gourmet fine seasoning
Preparation of crispy bread cubes
- Cut the bread into slices, cut off the rind and dice the bread – toast the bread cubes in clarified butter until crispy – sprinkle with salt and sprinkle with liquid garlic – let cool on kitchen crepe
serve and decorate
- Before serving, purée the soup again finely and foam it up – then fill the plates – sprinkle with crispy bread cubes and parsley
