Simple couscous

Ingredients for 4 servings:

  • 250 g couscous
  • 1 onion(s), diced
  • 1 clove(s) garlic, chopped
  • 2 tbsp, heaped tomato paste
  • 1 tsp cumin powder
  • 2 pinches of cinnamon powder
  • e.g. chili flakes or fresh chili peppers
  • e.g. salt and pepper
  • Oil for frying
  • 250 ml water

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Sauté the diced onion, chopped garlic, and chili pepper in oil in a pan. Add the tomato paste and fry briefly. Deglaze with water and stir in the couscous. Let it swell according to the package instructions. Season with cumin, cinnamon, a little salt, and pepper. This recipe serves as a base; I’ll expand it as needed and add more depending on my appetite and what’s on hand. For example, parsley, diced tomatoes, bell peppers, roasted or baked vegetables, and olives go well with it.
