Ingredients for 4 servings:

  • 250 g rice (sushi rice)
  • 2 tbsp vinegar (rice vinegar)
  • 1 tbsp, levelled sugar
  • 1 tsp salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Basic recipe

Rinse the sushi rice in a sieve under cold running water until the water runs clear, then drain the rice grains well. Bring the rice to a boil with 300 ml of water, simmer for 2 minutes, reduce the heat, and cover and let the rice simmer over low heat for 10 minutes. Remove the lid, place two layers of kitchen paper between the pot and lid, and let the rice cool for another 10 to 15 minutes. Meanwhile, bring the rice vinegar, salt, and sugar to a boil and let cool again. Transfer the rice to a bowl, drizzle with the seasoning vinegar, and mix it in with a wooden spatula, but do not stir. Cover the rice with a damp cloth until ready to use.
