Simple creamy potato soup with a hint of white wine à la Didi

Ingredients for 5 servings:

  • 1,250 g floury potatoes
  • 1 bunch of soup vegetables
  • 1 liter vegetable broth
  • ¼ liter dry white wine
  • 1 jar sausages (cocktail sausages)
  • 200 ml sweet cream
  • ½ bunch parsley
  • Salt
  • pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Peel the potatoes, cut into small cubes, and place in water. Cut the soup vegetables into small cubes or rings. Bring everything to a boil with the stock and white wine. Simmer the soup for 1/2 hour. Remove from the heat and blend vigorously with a hand blender until smooth. If the soup seems too thick, don’t worry, it’s just right. Now add the cocktail sausages and stock to the soup. Add 200ml of sweet cream and bring back to a boil briefly, stirring constantly. Season to taste with salt, pepper, and nutmeg, and serve sprinkled with chopped parsley.
