Simple curry chicken with broccoli

Ingredients for 4 servings:

  • 600 g chicken breast fillet(s)
  • e.g. curry powder
  • 1 broccoli
  • 1 onion(s)
  • 2 garlic cloves
  • 2 spring onions
  • 4 tbsp olive oil
  • 500 ml coconut milk
  • 3 tbsp Thai curry paste, yellow
  • ½ lime(s), juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the chicken breast fillets into bite-sized pieces. Peel and finely chop the onion and garlic. Slice the spring onions into thin rings. Wash and finely chop the broccoli. Heat the olive oil in a large pot. Season the chicken with curry powder, salt, and pepper. Brown the seasoned chicken with the garlic and onion, stirring frequently. Once the chicken has a nice golden brown, add the coconut milk, curry paste, and lime juice. Simmer for 5-10 minutes, then season to taste with salt, pepper, and curry paste. Finally, add the broccoli and spring onions to the pot and cook over medium heat for another 5-10 minutes, until the broccoli is tender but still firm to the bite. Serve with any rice. Approx. 800 kcal per serving with rice.
