Ingredients for 2 servings:
- 600 g potatoes, peeled and weighed
- 50 g tomatoes, pureed
- 50 g remoulade
- 50 g vegetable juice
- 15 g soy sauce
- 15 g honey
- 1 tsp sea salt
- ½ tsp black pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
First, combine the dressing ingredients and set aside. Halve the potatoes lengthwise, cut into ½ cm thick slices, boil for 8-10 minutes, and drain. Toss with the dressing, season with salt and pepper to taste. Let stand for about 15 minutes and serve.
