Ingredients for 1 servings:

  • 500 g flour
  • 1 packet of baking powder
  • 250 g sugar
  • 1 tsp cinnamon
  • 60 g almonds, ground
  • 250 g butter, cold
  • 5 tbsp milk
  • Flour for the work surface
  • 1 egg white for brushing
  • 50 g almond flakes for sprinkling

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

for approx. 80 pieces

Pile flour, baking powder, sugar, cinnamon, almonds, and chopped butter onto a work surface. Make a well in the center and pour in the milk. Chop everything together with a large knife and quickly knead with your hands to form a shortcrust pastry. Cover and chill for 2 hours. Preheat oven to 180°C (top/bottom heat). Roll out the dough thinly on a lightly floured surface and cut out shapes. Place on a baking sheet lined with baking paper. Brush the speculatius biscuits with beaten egg white and sprinkle with flaked almonds. Bake in the preheated oven on the middle rack for 12 to 15 minutes.
